We were responsible for the design, planning, and construction of a new roadside restaurant brand. Based on a menu centered on aged meats and cooking processes using carefully selected ingredients, we aimed to appropriately express the brand’s characteristics through the space. The interior is designed around a motif of a traditional Japanese cooking stove (okudo-san), symbolizing rice cooked in a large iron pot, creating an environment where customers can feel the meticulous preparation and commitment to ingredients behind the dishes. The design subtly conveys the brand’s important elements, such as the umami of aged meats, the texture achieved through double frying, and the cabbage selected according to the season, through the texture of the ingredients and the lighting plan. Furthermore, with an eye on future multi-store expansion, we created a design structure that is easy to standardize, establishing a design framework that can be flexibly deployed according to location and store size. In addition, we aimed to balance functionality as a store that is easy for the local community to use with the brand’s worldview by considering a wide range of customers in the design, traffic flow, and seating arrangement.
